Mezzago asparagus

Up to a few years ago, all of the farmers in Mezzago (Milan) used to grow asparagus and until the Sixties they regularly sold it at the fruit and vegetable market in Milan, but now this cultivation is limited to just a few hectares. Mezzago asparagus is obtained by cutting the shoot about 17 cm deep in the round, when it reaches a height of 3 to 5 centimeters. It is completely white in colour, with a pink tip.
