Jaba or Khalasi desert truffles (Tuber magnatum Picco) are a type of wild seasonal mushrooms that grow in the desert after rainfall in Northern boarders province. They resemble potatoes in shape and are buried 5 to 15 centimetres underground. These truffles are used as a food source and emerge after the appearance of Zubaidi desert truffles. Zubaidi truffles are located deep within the ground and require sunlight and a longer period to surface, usually in February and March. The Jaba desert truffle grows further away in the ground than other types of truffles, resulting in a different taste. The color is almost red, and it takes on the color of the soil in which it grows and is known in the region as a tolerant type of truffle as it stores and keeps well and even the meat of the poor as it has a meat-like texture once boiled. It takes a full hour of poaching until it is cooked and ready to be eaten.
These truffles can be found in the valleys and desert areas spanning from Rafha to Tiref, passing through Al-Ouqeliya and Arar. The northern parts of these provinces adjacent to the northern border strip are especially fertile. In addition, the area extending south to Al-Jouf is also conducive to the emergence of desert truffles, such as in Al-Amariyah and north of Sakaka. The Khalasi desert truffle, in particular, requires prolonged exposure to sunlight for its growth.
Historically it called the meat of the poor was because it was used as a substitute for meat and because of growing during thunderous rainfall, was formerly known as the ‘Thunder Plant’. In Arabic. However, it is called Faqa’a, which means pop, because it bursts open on the ground as it grows.
Both men and women harvest the truffles in a unique and enjoyable manner. After harvesting and washing, it can be prepared in various ways, such as grilling, frying, and adding it to other dishes to give them a distinct flavor. For instance, it can be mixed with rice or butter. Additionally, it adds a unique and distinct flavor to rice and other dishes. Apart from its culinary uses, it is also known for its health benefits, as it contains a high amount of dietary fiber, vitamins, minerals, and antioxidants. Furthermore, it is known for its use in treating eye ailments, as mentioned in the hadith of Prophet Muhammad (peace be upon him): "Al-Kama’a (desert truffles) from the Manna, and its water is a cure for the eyes." (Reported by Al-Bukhari and Muslim in their authentic collections) and it can be presented as a gift.
Jaba desert truffles are a popular ingredient used in home cooking and sold in markets for economic benefit. However, they are only available during a specific season and are dependent on heavy rainfall as a blessing from Allah. This means that the risks associated with their availability are high.
