Droëwors in Afrikaans literally called "dry sausage" is a Southern African snack food. Popular in countries like South Africa, Zimbabwe, Botswana and Namibia, it was based on the traditional, coriander seed spiced boerewors thick sausage which is made into a spiral shape and then cooked. Because boerewors doesn’t keep well unrefrigerated, it was realised that drying these sausages by hanging them in hot dry African conditions was a good way to get them to keep for longer. And thus, the traditional Droëwors was born.
It is usually made from dunwors (Afrikaans for "thin sausage") rather than dikwors ("thick sausage"), as the thinner sausage dries more quickly and is thus less likely to spoil before it can be preserved. If dikwors is to be used, it is usually flattened to provide a larger surface area for drying.
The recipe used for these dried sausages is like that for boerewors, though pork and veal are usually replaced by beef, as the former can go rancid when dried, mutton fat replaces the pork fat used in boerewors. Drying makes the sausage ideal for unrefrigerated storage.
Similarly, to Biltong, this snack has become a traditional staple food in the average South African household. It is under threat by massive worldwide companies to dry and produce under quicker non-traditional methods.
Droëwors are made from minced meat and fat which is then seasoned and put into natural casings to create a thin sausage. The seasoning is a mix of salt, pepper, coriander, and other spices to give it a traditional Droëwors flavour. The whole sausages are then hung to dry for several days, meaning the product has a nice soft chew as the middle of the sausage will have retained a small amount of moisture. Meanwhile, the addition of fat into the sausage mince gives it a delicious, buttery feel and flavour.
Snacks, eaten raw dried, salads, road trip food, long trip snack. Eaten at sea by hungry fisherman.
It is a product that is truly South African, and we would like to protect its heritage in every way we can.
