It is a precursor of cheeses such as strach&igrave; tunt and taleggio, but while the latter is produced in medium and large factories, stracchino is produced by small family businesses in the Orobiche valleys. It was once made with the warm milk of stracche cows - meaning just returned from the mountains in local dialect - hence the name of the soft cheese.
