The national commissions collect testimonies of traditional knowledge and the descriptions of products and local breeds and send them to the Slow Food headquarters (specifically, the Slow Food Foundation for Biodiversity), to be recorded on the international website, translated, and shared with the network.

They also work to encourage, in agreement and collaboration with local networks in the Slow Food movement, the development of the project through campaigns, general communication activities, and alliances with other associations or individuals, whether institutional or otherwise, that further similar projects to safeguard biodiversity.
