Venosta Valley Ur-Paarl

Ur-Paarl nach Klosterart, which in German means the original convent-style double rye bread is the oldest version of the Venosta Valley’s typical bread. The traditional shape is a kind of squashed figure 8, obtained by joining together two round, flat loaves. This is why it is called “Paarl,” meaning couple. The size can vary, with the diameter ranging from 10 to 30 centimeters and the thickness from 2 to 3 centimeters. Every baker personalizes their recipe, taking the basic dough of rye and farro flour and sourdough starter and adding variable amounts of fennel seeds, caraway and blue fenugreek, all picked wild from the pastures. With the addition of fruit like apricots, pears and berries, it becomes Früchtebrot, a delicious sweet bread.

As well as the bakers, the Presidium’s production chain includes several farmers who have started to grow rye again. The Upper Venosta Valley was long considered the “granary” of the Tyrol, and its rye, which grows at very high altitudes, was sold throughout Europe. The Presidium wants to promote the Ur-Paarl made by the Venosta Valley’s bakers and to reintroduce the heritage rye variety grown in the valley in centuries past.
