Vara Valley Black Cock

This large black breed was selected at the end of the 1920s by the provincial poultry center in Genoa, but all but disappeared following the Second World War. One of the reasons for its abandonment was undoubtedly its size, which is completely unsuited to the consumption habits of modern families. The majestic breed has pure black silky plumage with metallic green highlights, and a large, bright-red single crest with five points. The birds roam freely and feed on grains, garden trimmings, grass and insects. Thanks to their natural diet, supplemented by their grazing, the quality of the firm and flavorful meat is excellent.

Though poultry breeds normally require around four months of farming, the black cock reaches its ideal weight—over 3 kilos—only after 10 months. The primary objective of the Presidium is to create a stable demand, so that farmers can make investments and enlarge their coops. One of the Presidium’s plans is to open a small slaughterhouse; a facility is needed in the valley to avoid high transport costs. The birds must also be sold at a truly profitable price.
