Vino Santo Trentino

This wine is made only from the native nosiola grape, which flourishes in the Valle dei Laghi area. Loose bunches from old vineyards in specific small plots are the only grapes that can survive the lengthy raisining required to make the wine. The grapes are picked late, when very ripe, and laid out on racks known as arele in lofts. Constant ventilation is guaranteed year-round by the “ora del Garda,” the wind blowing from the nearby lake.

Vino Santo (“holy wine”) was once considered a fortifying medicine, used to supplement the diet of invalids. No other wine uses grapes that dry naturally for so long. But despite its unquestionable quality, the tendency today is to plant popular international varieties instead of traditional grapes like nosiola. This ancient practice, kept alive only by the tenacity and passion of a handful of producers, now risks dying out.
