The Fiaschetto tomato, small, sweet, juicy and good for preserving, is part of the gastronomic history in this part of the province of Brindisi. It was the base for the passata that all families, even in urban areas, used to make for the winter. The idea of using any other type of tomato, even the famous San Marzano, was unthinkable. But despite its deep roots in the local culture, the cherry tomato came close to disappearing. It cost too much to cultivate and especially to harvest, and yields were too low compared to the modern hybrids developed for sauce making.
Harvest begins from the second week of June and continues throughout the summer. The tomato sauce is available year-round.
