Sant’Erasmo Violet Artichoke

Incredibly flavorful vegetables grow in the clayey, well-drained and salty soil of the island of Sant’Erasmo, including a local dark purple variety of artichoke, tender, spiny and elongated in shape. In the past, in vegetable plots around the lagoon, the plants used to be fertilized with “scoasse”, rubbish, or with shells and crab shells, which would help correct the soil’s acidity. Known as “articiochi” in the Venetian dialect, they were introduced to the city’s cuisine by the Jewish community, and are generally eaten raw. The first apical buds, known as “castraure”, are a real delicacy.

Season

The artichokes are available fresh from the end of April until early June. They are available year-round preserved in oil.

Only a few artichoke-growers still remain, and they are mostly elderly. A Presidium has united them with the aim of raising the profile of the violet artichoke grown on the islands near Venice, promoting it and allowing producers to obtain more profitable prices. Some producers make artichokes preserved in oil, to add value to a crop that at the height of the season suffers from low market prices.
