Roussillon Dry Rancio Wine

Roussillon is a small French region that has been shaped as much by the culture of Spanish Catalonia as by that of France. Technically part of the eastern Pyrenees, it is France’s southernmost province, and the famous mountain range is very much in evidence here, cresting above the region and plunging into the Mediterranean, right near the town of Banyuls. Grape vines grow along Collioure and Banyuls on the coast, as well as inland in Maury and Rivesaltes. Dry Rancio Wine is usually made with grenache or maccabeu grapes, the same used for making Banyuls, Maury, and Rivesaltes sweet wines.

This wine is a testimony of Roussillon’s winemaking history: It was known as Banyuls before the laws changed regarding naturally sweet wines (those classed VDN in the French system). This change in laws allowed naturally sweet wines to be made with the addition of pure alcohol to stop the wine’s natural fermentation, keeping some sugar in the wines, and making an irrevocable change in their traditional taste. Rancio wine is defined as dry because all of its sugars have been fermented into alcohol. “Rancio” refers to the wine’s aging in partially filled barrels, an environment that favors oxidation. In order to cultivate pleasing flavors in these surroundings, it is essential that the wine have a high alcohol content.
Rancios wine is a far cry from many modern northern wines. It does not pair easily with food, and consumers—apart from Catalonians and the locals from Roussillon—are not used to its flavors. The few that appreciate its unique flavor drink it as an aperitif, to accompany tapas or salted anchovies. However, a Dry Rancio Wine can easily substitute for Cognac or Armagnac at the close of a meal, and it heightens the enjoyment of a cigar. The flavor of the wine includes notes of toasted nuts, vanilla, licorice, and walnuts— all characteristics of the long aging in open barrels.

In 2004, Slow Food established the Rousillon Dry Rancio Wine Presidium with about 15 producers whose product was almost unavailable on the market. Only after the completion of a complex legislative process could the wine even be labeled as “rancio.” In 2012 two PGIs (protected geographical indications) were created: Côtes Catalanes rancio sec PGI and Côte Vermeille PGI. The Presidium, founded to promote Rancio and to educate consumers about its particular qualities (especially in countries where oxidative wines are already appreciated), has helped to bring this interesting product out of the shadows.
