Pertosa, 70 kilometers south of Salerno, is known for its caves, formed over 35 million years. But the small town, and its neighbors Auletta, Caggiano and Salvitelle, are home to another unique treasure: a rare white artichoke. The spineless inflorescences are large, round and globular, with a distinctive hole at the top, and such a pale green as to appear almost silvery white.

Season

The harvest is from mid-March to mid-May, according to the seasonal pattern

Until a few years ago, farmers grew the white artichoke in small plots at the edge of their fields, mostly for family consumption. However, this very marginal crop had extraordinary potential. Thanks to its superb sensory qualities, plus the Presidium producers’ entirely natural management of their artichoke plots, without the use of chemical treatments or fertilizers, the artichoke now plays a starring role in the area’s agricultural economy.
