Neapolitan Papaccella

From July until the first cold snap, market stalls in Naples overflow with peppers, but only true Neapolitans can distinguish the authentic papaccella from the more common hybrids. The small fruits are ribbed and slightly squashed, and their intense color is either bright yellow shading to green, or dark red shading to green. Fleshy and flavorful, they are no more than 10 centimeters in diameter. Papaccella peppers are distinguished from similar-looking hot peppers by the sweetness of their flesh.

The vegetable gardens where the peppers were once grown are found mostly around Brusciano, where the surname Papaccio is in fact quite common. With the collaboration of the Campania Regional Authority, the original seed has been recovered, and a strict protocol has been drawn up, guaranteeing that production is environmentally friendly. Thanks to the activities of the Presidium’s market gardeners, the papaccella has returned to Neapolitan markets, and so have the traditional pickled peppers, the main ingredient of the Neapolitan Christmas dish known as “insalata di rinforzo” (reinforcement salad).
