Piedmontese Heirloom Apple Varieties

The eight varieties covered by the Presidium—Grigia di Torriana, Buràs, Runsé, Gamba Fina, Magnana, Dominici, Carla and Calvilla—all store well (except for the Carla), becoming more flavorful and aromatic over time. The Grigia di Torriana and Buràs are especially good baked in the oven.

Season

Each variety is harvested at a different time; this can range from the 20th of September to the 10th of November. The apples are available from the Presidium’s producers until spring and can be enjoyed as transformed throughout the year.

The story of Piedmontese apple growing dates back to the Middle Ages, when the monastic orders cultivated and improved the varieties that had survived the barbarian invasions. In the 18th century, the peasants who crossed the Alps in search of work brought new grafts and cultivation techniques from France. By the early 20th century, Piedmont was home to thousands of varieties, but then industrial agriculture made a cruel selection. The market preferred foreign apples, bigger, prettier and less delicate, and the traditional varieties only survived in marginal areas like the valleys at the base of the Alps.

Area of Production: Val Pellice and the adjacent Cuneo valleys.
