Gentili Wheats of Sicily

Sicily is widely recognized as one of Italy’s main granaries for durum wheat, yet the biodiversity of local soft wheat is much less known. Among these treasures are the Gentili wheats of Sicily—the traditional local varieties of soft wheat—which represent one of the oldest and most fascinating legacies of Mediterranean agriculture, accompanying the island’s culinary history for centuries.

Gentili wheats are renowned for their extraordinary hardiness and their ability to adapt to the diverse soil and climatic conditions of Sicily. Their strength does not come from modern interventions but from the generations-long selection carried out by farmers, who carefully preserved, improved, and passed down incredibly rich genetic material. The Stazione Sperimentale di Granicoltura per la Sicilia, through extensive cataloging work, has safeguarded this precious heritage, consisting of both individual varieties and genetically heterogeneous populations, sharing it with farmers as living genetic treasures capable of evolving and adapting.

Among the most representative Gentili wheats of Sicily are Maiorca, Maiorca di Pollina, Cuccitta, Romano, Maiorcone, Pilusedda, Tiraditto, and Rosia—each with different accessions, and each deeply tied to a specific place, microclimate, and agricultural memory.

The history of wheat cultivation in Sicily is ancient: cereals arrived in the Mediterranean from the Fertile Crescent during the Neolithic, around 6000 B.C., and have never abandoned the island, thanks to its varied terrain. Diodorus Siculus and several Roman sources recall Sicily as one of the main granaries of the Roman Empire, a crucial crossroads for grain supply. This historical rooting has shaped both a rural and a cultural landscape, in which local varieties became intertwined with the identity of the island.

Today, the production area of Gentili wheats covers the entire agricultural territory of Sicily, dominated by a Mediterranean climate with mild, wetter winters and hot, dry summers. While favorable overall, in recent years this climate has shown increasing fragility and instability: extreme weather events, such as sudden torrential rains alternating with prolonged droughts, are severely testing these delicate cultivations.

Season

The harvest takes place between June and July, and the flours are available year-round.

Over the past ten years, the cultivation of soft wheat in Sicily has declined by more than 70%, a clear sign of climate change, the gradual loss of traditional farming practices, and increasing pressure from foreign competition, often offering lower costs but standards that cannot compare in quality.

The Slow Food Presidio was established to protect, enhance, and promote the knowledge and consumption of the Gentili wheats of Sicily, to restore dignity to this unique agricultural and cultural heritage, foster transparent and sustainable supply chains, support the farmers who safeguard these varieties, and help consumers understand the value of Sicily’s cereal biodiversity. Each seed preserves a fragment of history, and each cultivated field is a concrete act against the agricultural homogenization threatening these lands.

Protecting the Gentili wheats means preserving the memory of the island, supporting resilient rural communities, and ensuring a richer, more diverse future for Sicilian agriculture. The Presidio encourages the rediscovery of these wheats, the support of their cultivation, and their use in bread-making, pastry, and local products, so that this irreplaceable heritage is not lost.
