Gargano Podolica Cattle

One might think that the origins of native Italian cattle breeds are lost in the mists of time. In fact, most of them were developed in the middle of the 19th century, when crosses between imported varieties and native stock produced well-known breeds like the Chianina, the Piedmontese and the Romagnola. However, in the south, where agricultural development has been slower and the climate and grazing conditions are more difficult, the Podolica has preserved original characteristics directly referable to “Bos primigenius”, the auroch. The hardiness, frugality and stamina of the Podolica mean it was long valued as an important work animal.

The Presidium was started to protect and encourage the farming of this breed. As well as producing beef with unusual sensory characteristics, it is also raised wild, guaranteeing wholesome meat rich in mineral salts. However, the beef can deter modern consumers because of its more fibrous consistency and characteristic flavor, stronger than meat from more common beef breeds. The beef must be hung properly, a procedure which is completely neglected by a market that focuses instead on beef from young animals.
