Gargano Goat

The Gargano goat breed, called Nustrala (“local”) in dialect, is an ancient breed native to the Gargano promontory, an area where goat farming has always played a fundamental role in the local economy. It is suited to both milk and meat production and is allowed to roam freely. The breed is immediately recognizable: The coat is long, smooth and jet-black, the head has a tuft on top and a long beard under the chin and the horns are slightly flattened and twisted, their points facing outwards so that they form an arc.

Season

Muscisca (slices of dried goat meat) is available throughout the year while cheese production depends on the goat’s lactation cycle, which usually occurs in the spring-summer period.

The Presidium was founded to encourage the farming of the breed, uniting farmers from around the Gargano area and promoting the production of Canestrato and Cacioricotta using traditional cheesemaking techniques. Additionally, the project wants to encourage the consumption of both fresh meat and cured products by involving local butchers.
