Cavasso and Valcosa Onion

This corner of the province of Pordenone, at the foot of the mountains and bordered by the Meduna and Cosa rivers, is characterized by barren soil, difficult to cultivate. But for centuries it has preserved a gastronomic rarity, an unusual variety of red onion.
Cavasso onions are deeper in color than the Cosa Valley onions. The local women traditionally wove them into braids called riesti using palut, a long, strong reed, and sold them in the villages. During difficult times they would barter them for corn from the low-lying Bassa Friuliana area. From the 1960s, the onion’s cultivation was gradually abandoned, but the tradition remained among the older generations, and the seeds were saved in a few family vegetable plots. Now the local inhabitants are starting to revive the onion and record the old stories relating to its cultivation.

Season

The onions are picked in August and once woven into braids they can keep all year.L
