The quality of the soil in Acquaviva delle Fonti, well-drained and aerated, deep, rich in potassium, moderately loose-packed and tending towards muddiness, gives the local red onions characteristics for which they have been renowned since the 19th century. Known for its sweetness, this variety is recognizable by its flattened shape. As wide as a hand’s breadth, the onions weigh around 500 grams each. The onions’ color is somewhere between carmine red and violet, gradually lightening towards the middle until it becomes completely white. During the local fair celebrating the onions, they can be sampled in “rustici”, focaccias stuffed with red onions and ricotta forte.

Harvested from July to August.
The onion is only grown around the town of Acquaviva delle Fonti. The surface area planted with onions has decreased in recent years and the average yield per hectare is much lower than the national average, 200 quintals compared to 300.
The Presidium was founded to promote the Acquaviva onion nationally, so that it can command a fairer price that fully reflects the producers’ hard work.
