Monofloral or polyfloral

Honeys are distinguished as either monofloral or polyfloral (or wildflower). Monofloral honeys are derived mainly from one single essence or flower (this can be established with a special pollen analysis). Wildflower honeys on the other hand are made from pollen collected from numerous flowers, and therefore display different colors and flavors from year to year.
