Thyme honey from Iblei Mountains, renowned and appreciated since ancient times, is made from thimus capitatus, a herb allowing bees to produce a very perfumed and dense honey called ‘satru’, which is harvested from July to August. Excellent as it is or spread on some bread, it is often used as an ingredient for pastries, such as the traditional ‘pirietti’, dry biscuits made by mixing honey with flour and ground almonds.Thyme honey is now produced in the town of Sortino, in the Iblei Mountains, Sicily.
